Broiled Stuffed Pork Tenderloin

A tasty satisfying dish doesn't have to be complicated. Pork tenderloin is a lean cut of meat, which is very affordable and easy to use. In this recipe,I used ingredients, which I had available in my pantry and fridge. The stuffing is came out delicious and give the lean tenderloin a rich component.
Ingredients:
1lbs Pork Tenderloin
4oz Cream Cheese
1/2 cup white mushrooms
1/2 onion, diced
1 clove garlic, finely chopped
3 cups Baby Spinach
1/8 Sun dried Tomatoes
2tbl grated Parmesan cheese
1tsp. Olive oil
Salt, Pepper for seasoning

Directions:





Saute onions, garlic, mushrooms and sun dried tomatoes in a medium size pan, add the the baby spinach and mix until the spinach gets soft. Add the cream cheese and combine well. Season with salt and pepper. Take the cream cheese mixture out of the pan and set aside to cool off.
Cut the pork tenderloin lengthwise so it will be flat. Put the cream cheese mixture lengthwise in the center of the tenderloin and fold the tenderloin around it. To hold the cream cheese mixture and meat together use kitchen string.
Broil in the oven from both sides until the temperature reaches 145F (around 25 min).
Serve with a red wine mushroom gravy, mixed greens
